"Sassontino 10 Year Release", Casanova della Spinetta [wood] 2008 Bottle:1 Yeast: Enartis Ferm ES 181A single vineyard blend of 95% Sangiovese and 5% Colorino from Casanova, Terricciola, aged in new, medium toasted French oak tonneaux (500L) for 12 14 months. After the wood has imparted its flavors, the wine is transferred to stainless steel vats for 3 months before bottling, then left to age in the cellar for another 3 4 months before release.
