The house style for Pinot is all about finesse. Vinified in open top wooden cuves, with the must kept cool before fermentation kicks off. This lasts about two weeks, some pump overs with the occasional punch down too. Then a year and a bit in barrel, only around 15% new. Ive got a real soft spot for Auxey. All plums and petals!
