Sassara, Blanc de Noirs 'Corvina' 2019 Classic quartz gravel + red ironstonePlace: Veneto, Italy Grape: Corvina Vibe: Serious Trad method, but not as you know it. Blanc de Noirs here, with Corvina as the foil. Primary ferment is in amphora, and then we hit the religious areas, with the must for the second ferment being dried until the Easter weekend. Holier than thou. Super interesting, dry and driving. There's depth of flavour, and a nice nutty element that speaks more of longer matured grower fizz than what we normally see
